Method

Slice and dice a small onion into very small pieces first. Do the same with a couple of sun dried tomatoes. Gently fry the onion until it softens a little - this will take five minutes at most as you DON'T want if to be fully cooked. Alternatively you could use chives or red onions which would need no cooking. Tip the onion into a small bowl, add the chopped sundried tomatoes, a TINY squeeze of garlic puree then season with a pinch of salt and a few twists from a black pepperpot. Mix well. "Butter" your selection of ryvita with a little tomato puree and then spread a teaspoon or so of your tomato and onion mix, depending on the size of the crispbread, on. Depending on your personal taste you could also add some sliced olive or mushrooms. Then cover the top with slices of mozarella cheese and grill your "pizza" until the cheese is bubbling.
