Baked Salmon With Ryvita Confetti
The crunchy, wholesome taste of Original Ryvita Crispbreads provide the perfect compliment to the tangy crème fraiche and succulent salmon in this luxurious recipe.

Ingredients
- RYVITA® Original Crispbread
- 1 salmon fillet
- 1 tablespoon Creme Fraiche
- 1 tspn finely chopped dill
- Grated zest of 1 lemon
- 1 tspn lemon juice
Method
Sprinkle the salmon fillet with the dill and lemon juice. Place on a baking tray and bake for 10 minutes. Meanwhile, crush the Ryvitas into chunky crumbs and mix with the crème fraiche. Remove the salmon from the oven and spread the Ryvita and crème fraiche ‘confetti’ on top. Return to the oven for a further 5 minutes. Then remove and serve on a bed of green leaves and sprinkle with lemon zest.
