Grilled salmon with cucumber-mint yoghurt
Tasty grilled salmon with a refreshing cucumber-mint yoghurt.

Ingredients
- RYVITA® Cracked Black Pepper
- Salmon – grilled
- English cucumber – washed well and diced
- Half of a cup of fresh mint leaves – washed well and finely chopped
- Greek yoghurt (2 cups)
- Salt and pepper for seasoning
- 1 Lemon (optional) – freshly squeezed
Method
For the cucumber-mint yoghurt – mix the yoghurt with the finely chopped mint and diced cucumber until even and season with salt and pepper and a little lemon juice if preferred for extra taste. Refrigerate and allow to cool.
Prepare the grilled salmon and break into chunks. Serve the cucumber-mint yoghurt over the grilled salmon on black pepper crispbreads.
