Ingredients

  • RYVITA® Cracked Black Pepper
  • Salmon – grilled
  • English cucumber – washed well and diced
  • Half of a cup of fresh mint leaves – washed well and finely chopped
  • Greek yoghurt (2 cups)
  • Salt and pepper for seasoning
  • 1 Lemon (optional) – freshly squeezed

Method

For the cucumber-mint yoghurt – mix the yoghurt with the finely chopped mint and diced cucumber until even and season with salt and pepper and a little lemon juice if preferred for extra taste. Refrigerate and allow to cool.

Prepare the grilled salmon and break into chunks. Serve the cucumber-mint yoghurt over the grilled salmon on black pepper crispbreads.
