Vegetable crumble

Roasted vegetables in a red wine sauce with ryvita and goats cheese crumble topping.

Method

Fry onions with peppers, garlic, aubergine, mushrooms, courgette and sweet potato. Add the red wine and vegetable stock and simmer for 15 minutes.

In a separate bowl crumble the ryvita and add the goats cheese, flour and margarine. Mix until the mixture resembles crumbs.

Empty the vegetables into an oven proof dish and spread the crumble mixture evenly over the top. Cook in the oven for 25 minutes.

Serve hot with salad or potatoes.
