A tasty coupling of royal cheesecake and berry-tastic Eton mess, when it comes to the crunch this is a dessert designed to last... ooh, all of five minutes!
RYVITA® Recipe
Ingredients
- RYVITA® Fruit Crunch Crispbread
- 250g mascarpone
- 150g cream cheese
- 150g raspberries
- 150g blueberries
- 2 tbsp honey
- Mint leaves (to garnish)
Method
• Beat together the mascarpone and cream cheese with the honey • Crumble the Ryvita • Place a spoonful of cheese mix into the base of a glass, then add a whole crumbled Ryvita • Add another layer of cheese mix, then raspberries, then more cheese mix and blueberries • Finish with a layer of cheese mix and a mint leaf to garnish

ReportWow that looks really nice. I'm a ryvita fan anway but never thought to make a dessert out of it!
