British Medley

Refreshing Ryvita recipe from all four corners of the British Isles-using Scottish Goats Cheese, Carmathen Ham (similar to Parma Ham), Irish Whiskey & Fig Chutney topped with English Rocket.

Method

The chutney recipe involves frying a red onion with butter, then adding 150ml balsamic vinegar, 100ml Bushmills (or other Northern Irish Whiskey), 150g brown sugar, 1tbs mixed spice, dash of lemon and olive oil. Boil for 30 mins and then add 7 figs. Simmer for 15 mins and then allow to cool in a sterilised jar

Assemble the goats cheese and Camarthen Ham on the Crispbread, drizzle a little chutney on top and top with a spring or two of rocket.
