Ryvita Crannachan Royale
Being Scottish in origin and made with fresh Scottish produce,this delicious dessert is made in honour of Prince William and the future Princess Catherine who met each other in St.Andrews, Scotland which is twenty minutes from my home town with fresh rasberries from Tayside, whisky from the Highland and oats from Fife, its Fit for a future King and Queen!
RYVITA® Recipe
Ingredients
- RYVITA® Fruit Crunch Crispbread
- 100g pin head oats
- 4 table sp. runny honey
- 4 table sp.malt whisky
- 150g raspberries
- 25g tub of mascarpone or mascarpone light
- small tub of double cream
- 100g of hazelnuts (optional)
- 100g butter
Method
melt the butter in a medium frying pan and add oats. Toss the oats till crisp. Watch this all the time as they can easily burn. Crumble up the 2 x ryvita fruit crunch and add to the oats and butter. Keep a small amount for sprinkling over the top of the dessert.Also keep a few whole rasberries for garnishing the top of each glass. Warm up the runny honey and add the malt whisky.Blend half of the raspberries in a blender till smooth. The other half of the rasberries have to be coated with the whisky and honey. Take half the raspberies which are coated and put a layer in a tall glass.Add the blended rasberries and remainder of the whisky and honey into the mascarpone and cream. This will make a marbled effect. Make layers, in the tall glass of the oats/ryvita, the cream mixture and rasberries coated with whisky finishing off with the cream/mascarpone layer on top. Finish off with a sprinkling of the oats /ryvita and garnish with raspberries.

ReportIf its for someone with a very swet tooth, some sugar may be added to the oats. Brown sugar gives the better flavour.
