Lemongrass & Ginger Chicken Broth

A modern twist on a classic broth, with the clean flavours of lemongrass & ginger, delicately flavouring a clear broth of chicken, celery, onion & barley.

Method

Finely dice celery and onion and sweat in a pan. Add chicken stock, shredded chicken & barley. Add one lemongrass stalk and a little grated ginger. Allow to simmer over a low heat for 20 minutes. Serve with Ryvita crispbread. Delicious!
