Method

Peel and dice parnsips. Fry using some low fat spray oil or a little olive oil for about 5 mins on a low heat, adding the spices after a minute or two. When parsnips softened, add the stock, bring to the boil and simmer for 10 minutes or until parnsips tender. Blend and serve hot with some Sweet Onion Ryvita crispbreads for a hearty, healthy lunch!
