Stilton and Sweet potato warmer

The combination of sweet potato and tangy stilton in this delicious soup will have you warmed up in no time.

Ingredients

  • RYVITA® Cracked Black Pepper
  • large knob of butter
  • 1 onion, diced
  • 2 leeks, sliced
  • 200g sweet potatoes
  • 800ml vegetable stock
  • 150ml double cream
  • 150g stilton, crumbled
  • salt and pepper

Method

Melt the butter in a large saucepan and cook the onion and leeks until softened. Add the sweet potatoes and cook for a further 5 minutes. Pour in the stock season with salt and pepper. Bring to the boil and simmer, covered for about 30 minutes. Remove from the heat and leave to cool. Transfer the soup to a food processor or use a hand held blender and blend until smooth.Stir in the cream and cook for a further 5 minutes.Gradually stir in the crumbled Stilton until melted (do not let the soup boil).Remove from the heat and serve garnished with finely crumbled Stilton.
