BROCCOLI AND APPLE

My favourite soup recipe, tasty and satisfying and If you wish to glam it up for a dinner party add swirls of cream or a little creme fraiche before serving, so quick and easy, but always attracts lots of compliments.

RYVITA® Recipe

Ingredients

  • RYVITA® Wholegrain Crackerbread
  • LARGE BROCCOLI HEAD
  • 2 APPLES
  • 2 VEGETABLE STOCK CUBES
  • 1 MEDIUM ONION
  • A LITTLE BUTTER OR OIL TO ADD TO THE PAN
  • PINT AND A HALF OF WATER
  • SALT AND PEPPER (OPTIONAL)

Method

ROUGHLY CHOP BROCCOLI REMOVING ANY HARD STALKS PEEL AND CHOP APPLES CHOP ONION. GENTLY SOFTEN APPLE AND ONION IN A LITTLE BUTTER OR OIL ADD TO CHOPPED RAW BROCCOLI

DISSOLVE VEGETABLE STOCK CUBES IN A PINT AND HALF OF BOILED WATER, AND ADD TO INGREDIENTS.

SIMMER UNTIL BROCCOLI HAS SOFTENED (ABOUT 20 MINUTES)

REMOVE FROM HEAT, AND WHEN INGREDIENTS HAVE COOLED SLIGHTLY, LIQUIDISE.

CAN BE PREPARED IN ADVANCE AND THEN REHEATED TO SERVE
