Spiced Parsnip and Pear Soup

Fruity, creamy and spicy the perfect combination especially with Fruit Crunch Ryvita Crispbread

RYVITA® Recipe

Ingredients

  • RYVITA® Fruit Crunch Crispbread
  • 1 tbsp butter
  • 2 shallots, chopped
  • 3 parsnips, peeled and chopped
  • 2 pears, peeled and chopped
  • 2 tsp mild curry powder
  • 3 cups water
  • 1 vegetable stock cube
  • 1/2 cup single cream
  • pinch of freshly grated nutmeg
  • salt
  • freshly ground black pepper
  • thinly sliced pear (for garnish)

Method

1. In a large saucepan melt the butter and fry the shallots until translucent. 2. Add the chopped parsnips to the pan along with the water and crumble in the stick cube. 3. Bring the mixture to the boil and stir in the curry powder and chopped pear. 4. Lower the heat until the mixture is simmering and cook until the parsnips become soft. 5. Blend the mixture until smooth and add in the cream. 6. Add the nutmeg and season with salt and freshly ground black pepper. 7. Ladle into bowls and garnish with the pear slices. 8. Serve straight away with Fruit Crunch Ryvita Crispbread to dip into this delicious delight!!
