Spicy Chicken, Tomato and Lentil Soup

Hot, spicy and filling this soup is a real winter warmer! (and low fat too!)

RYVITA® Recipe

Ingredients

  • RYVITA® Dark Rye Crispbread
  • 2tbsp olive oil
  • 2 onion, chopped
  • 2 carrots chopped
  • 3 cloves garlic
  • 2 chillies
  • 150g red lentils
  • can of chopped tomatoes
  • Salt and pepper
  • 2 tablespoons cumin
  • 3 tablespoons curry powder
  • 2 litres chicken stock

Method

Cook onion, garlic, chilli in the oil for 5 mins. Add the chopped carrot, lentils and tomatoes. Add cumin & curry powder Add stock and season Simmer for 30 mins Wait for soup to cool and then blend soup with hand blender

Then add strips of roast chicken (cooked with curry/tandoori spices) to make a more filling soup

Serve with Ryvita Dark Rye Crispread (to dip in!)

I eat this every day for lunch as part of my new years resolution to eat healthier!
