Broccoli and Apple Soup

RYVITA® Recipe

Ingredients

  • RYVITA® Sunflower Seed & Oats Crispbread
  • 21ozs Broccoli
  • 2oz Butter
  • 1 Onion finely chopped
  • 2 Granny Smith Apples peeled and chopped
  • 1 1/2 Pints Vegatable Stock
  • 1/2 a carton of low fat creme freche
  • 1 or 2 ozs of lightly toasted flaked almonds

Method

Cut broccoli into florets Chop stalks very finely Melt butter Add onions , apples and broccoli stalks cook for 5 mins or so Add the stock and the Broccoli florets . Bring to boil simmer for 10 mins or so . Remove from heat . Blend the ingredients until smooth Season well with salt and pepper . Stir in the Low fat Creme Freche . warm through and top with the flaked amonds . Serve with your favourite Ryvita's . mine is Suneflower and oats .
