Golden Carrot Soup

A soup made of carrots and a blend of tomatoes, onions, garlic and spice.

RYVITA® Recipe

Ingredients

  • RYVITA® Dark Rye Crispbread
  • Carrots (pointy ended)
  • Yellow Tomatoes
  • Any other Tomatoes
  • Onion (chopped)
  • Garlic
  • Chilli (Flakes or seeds)
  • Vegetable Stock

Method

Chop onion and brown in a saucepan with oil. Chop garlic finely and lightly cook. Add one chilli, chopped finely. Add all tomatoes (chopped) and cook until tpomatoes are mushy. Then add all carrots (chopped) and a pint of vegtable stock. Boil for 30 mins. With a handblender, blend all ingredients. Serve with ryvita or bread.
