Warming Chunky Caribbean Soup

A delicious, and wonderful warming sensation with and added bit of crunch!

RYVITA® Recipe

Ingredients

  • RYVITA® Cracked Black Pepper
  • 300ml beef or vegetable stock
  • Sprig of thyme
  • 2cm pice root ginger, grated
  • 1/2 Onion, diced
  • 1 garlic clove, crushed
  • 1 (small) bay leaf
  • 2 all spice berries
  • 125g each of White potato, butternut squash and Sweet potato, peeled and diced
  • 1 red chilli, desseded and diced
  • 150ml coconut milk
  • 150g butterbeans, drained

Method

1. Into a large pan add thyme, ginger, onion, garlic, bay leaf, allspice berries and stock, season and stir to combine.

2. Bring to boil and then simmer for 5-6 minutes.

3 Add the remainder ingredients to the pan, stir and simmer for another 15 mins approx or until the potato is tender and cooked through. Remove Pan from heat.

4. Serve immediately in bowls with Ryvita Cracked Black Pepper Crispbreads for an extra bit of crunch!
