Lolly's spicy warmer!

A thick nutritious soup with spicy chorizo, hearty chunks of roasted butternut squash and onions blended with tasty chickpeas

Method

Roast chunks of butternut squash and onions with garlic for about 20mins on a high heat. Meanwhile fry roughly sliced chunks of chorizo until they start to leak beautiful spicy oil, add more onion and fry until the onions start to caramelise. Add chick peas to the pan. You can mash some of them but it's nice to keep some whole as this soup is all about texture. Add hot stock (and optional chilli flakes) to the pan and gradually introduce the roasted squash and onions. Simmer away for a bout 20mins until the flavours have all infused. It's healthy, filling and absolutely delicious!
