Iron lady soup

Rich in Iron and calcium thats good for your bones with ryvita and nuts for a rye soup that tones

RYVITA® Recipe

Ingredients

  • RYVITA® Original Crispbread
  • 1/2 lb cooked beetroot
  • 1 litre full fat milk
  • 2 oz sugar
  • 4 original ryvita crispbread
  • 2oz butter
  • 12 raisins
  • 15 unsalted cashew nuts
  • 1 tablespoon sweet pickle
  • grated cheese

Method

1 Place peeled beetroot in a food processor and blend to a puree 2 place milk and break up ryvita in a pan bring to the boil and simmer for 20 minutes stirring occasionally. 3 add sugar to milk and stir until dissolved 4 heat butter in a pan, add raisins and chopped nuts and fry for 2 minutes 5 Add beetroot puree and cook for 10 minutes over a low heat 6 Pour the beetroot mixture into the milk, add the pickle and mix well 7 sprinkle with grated cheese before serving
