Warming Chicken and Butternut Cold-Buster

A simple, warming spiced soup with lots of cold-busting properties that will help to ward off those nasty winter bugs and, if you're already full of the cold this will help to speed your recovery and leave you feeling warm and satisfied.

Ingredients

  • RYVITA® Wholegrain Crackerbread
  • 5 Chicken thighs (you can use drumsticks with bones and skin as these will be removed later)
  • 1 Medium Butternut Squash, peeled, seeded and diced
  • 2 Small or 1 medium onion, diced
  • Extra Virgin Olive Oil
  • Salt and Pepper
  • 1 litre Chicken Stock
  • ¼ tsp Ground Ginger
  • ¼ tsp Ground Cumin
  • ¼ tsp Ground Coriander
  • ¼ tsp Ground Red Pepper
  • 1 tbsp Lemon Juice

Method

Preheat oven, gas 7 (220 degrees C). In a roasting tin, toss together the chicken thighs, butternut squash and onion with 3 tbsp Olive Oil. Season with salt and pepper. Arrange in single layer and roast until squash and chicken are cooked through for 30 - 40 minutes.

Transfer chicken to a plate and let cool. Transfer squash and onions to a deep pot and add the stock and spices. Bring to a simmer over medium heat. With a fork mash most of the vegetables until soup is thick and chunky or you can transfer to a mixer and lightly blend. Remove the skin from the chicken and cut into small pieces and add to soup. Put the bones back into the soup and simmer for 30 minutes and then remove them. This will add extra taste. Stir in lemon juice and season with salt and pepper. Serve with Ryvita crackerbread, dunked. Yummy!
