Method

Consomme soup is usually clear,just add any stock cube to clarify the stock, egg whites are stirred into the stock along with a mixture meat fish veggies herbs ect.The mixture is brought slowly to the boil - stirred constantly during this time to keep the whites from sticking on the pan!Once the mixture has come to the boil, the egg whites solidify into a soft crust on top of the stock any fats-solid impurities in the stock will attach themselves to the egg whites!The result the stock below is left clear Dip&dunk any Ryvita
