Particularly Parsnip Soup!

RYVITA® Recipe

Ingredients

  • RYVITA® Wholegrain Crackerbread
  • tbsp Olive oil
  • 1 onion (red or white)
  • 3 large parsnips
  • 4 medium potatoes
  • 1 tsp cumin
  • 1 level tsp mild chilli powder
  • 1 vegetable stock cube
  • a knob of butter
  • a splash of milk

Method

Peel and chop parsnips and potatoes. Chop onion and fry in the olive oil until soft but not browned. Add chopped vegetables and spices. Add crumbled stock cube and enough water to cover vegetables. Bring to the boil then turn down heat and simmer until the vegetables are soft. Add milk and butter. Blend (or mash with a potato masher for a chunkier soup) Check temperature and reheat slightly if neccessary.
