Sweet potato & Ginger Soup (with a kick)

Ingredients
- RYVITA® Pumpkin Seeds & Oats Crispbread
- 800g sweet potatoes - peeled & cut into small chunks
- 1 leek - washed, halved & cut into small slices
- 1/2 stick celery- washed & cut into small dice
- 1 onion- peeled & finely diced
- 3 teasp. fresh finely chopped root ginger
- 1 clove garlic - peled & finely chopped
- 1 bramley apple - peeled, cored & chopped
- 1L hot veg stock
- 2 Tablesp. sunflower oil
- 1 Teasp. ground cummin
- 1 Teasp. ground corriander
- salt & pepper to taste- add to cooked soup at end
Method
Heat oil in large deep pan( preferably non stick), gentley fry onion, leek, celery, garlic & ginger, add sweet potato chunks, ground cummin & corriander and the chopped apple.Cover with hot veg stock and simmer for approx 20-30 mins until sweet potatoes are tender. Remove pan from the heat and whizz the soup until it is smooth using a hand blender. Season to taste and serve - yum yum yum - just can't get enough of this soup!!
