sweetcorn and vegetable soup

This fantastic vegetable soup is really filling and warming on a cold day like today.

Ingredients

  • RYVITA® Cracked Black Pepper
  • 2 medium potatoes
  • 1 stick of celery
  • 1/2 a leek
  • 1 carrot
  • 1 cup of frozen sweetcorn
  • 1 chicken stock cube
  • small nob of butter
  • ground black pepper

Method

peel and chop the vegetables. melt the butter in a pan and add all the vegetables except for the sweetcorn. grind the black pepper over the top. cook on a low heat stiring occasionly for a few minutes untill the potatoes start to become opaque. Disolve the stock cube according to the instructions and add to the pan. Bring to the boil then simmer for 20 minutes. Add the sweetcorn and cook for another 3 minutes. Blend the soup in the pan then bring back up to the boil. Ladle into bowls and serve. If you are making for 1 cover the rest and place in the fridge for later.
