Appe-Thai-Zing Chicken Soup!
Not your usual winter soup, if you fancy something a bit different yet economical, then this simple Thai Chicken Soup is a pleasant change and will give you a spicy warming zing!
RYVITA® Recipe
Ingredients
- RYVITA® Sweet Chilli Thins
- Chicken Thighs
- Stock (Chicken or Vegetable)
- Red Pepper
- Mushrooms
- Coriander
- Fresh Chilli
- Garlic
- Lemongrass (optional)
- Oil
- Coconut Milk
Method
1 - Grill or oven bake the chicken thighs, remove the skin and strip all the cooked meat off the bone ready for the soup.
2 - Lightly fry slices of red pepper, mushroom, chilli and garlic in a little oil until softened
3 - Bring stock to the boil and add the fried ingredients.
4 - Add the stripped chicken a few sliced of lemongrass to the boiling stock and simmer for 10 minutes to allow the stock to infuse with all the flavours.
5 - Stir in some coconut milk and simmer for another 5 minutes.
6 - Serve with freshly chopped coriander sprinkled on top of each bowl and Ryvita Sweet Chilli Thins for a bit of crunch!
