Thai Winter Cold Buster Soup
A very quick, easy and delicious flu fighting, mood boosting soup that is pefect for these cold, dark January nights!
RYVITA® Recipe
Ingredients
- RYVITA® Sweet Chilli Thins
- 400ml vegetable stock
- 2tsps thai green curry paste
- 200g cooked chicken
- 1/2 can coconut milk
- 1 fresh chilli chopped finely
- 1 stick lemongrass (bashed to release flavour)
- 1inch fresh ginger
- 50g dried noodles
- Fresh coriander and lime juice to serve
Method
Bring the stock, curry paste, chilli, lemongrass stick and coconut milk to a boil and simmer for two minutes. Add the cooked chicken and continue to simmer gently. Meanwhile cook the noodles according to packet instructions. Divide the noodles between two bowls, then eemove the lemongrass stick from the soup and pour over noodles. Garnish with fresh coriander, a squeeze of lime juice and more finely chopped chilli if you are feeling spicy! Serve accompanied with delicous Ryvita Sweet Chilli Thins.
