Hearty smoked haddock and prawn soup

A delicious concoction of smoked haddock, prawns, onions, carrots, courgettes and potatoes, cream and stock - a meal in one.

Method

Cut 450g smoked haddock into large pieces. Slice 350g onion. Peel 350g potatoes and cut into small chunks. Dice 175g courgettes and 175g carrots into same size pieces as potatoes. Melt 25g butter in flameproof casserole. Add onion, courgettes and carrots and sauté gently, stirring, for 3-4 minutes. Add 900ml stock and potatoes and bring to the boil. Cover and simmer gently on the hob for 20 mins or until all the vegetables are tender. Add the haddock and prawns, bring back to the boil. Cover and simmer gently on the hob for 5 minutes. Just before serving , stir in 150ml single cream and t2-3 tbsp chopped parsley. Warm gently and season to taste with pepper.
