Two Types of Traffic Lights

These two appealing snacks look wonderful displayed at parties, and don't disappoint with taste or texture! They are also a great children's favourite.

RYVITA® Recipe

Ingredients

  • RYVITA® Original Crispbread
  • Green pesto and salad leaves
  • Red Leicester (or other orangey cheese)
  • Sliced salami (or grated beetroot if vegetarian)
  • Raspberry jam
  • Clementine segments
  • Thinly sliced honeydew melon

Method

First, the savoury traffic lights: Spread some green pesto at the top of a crispbread, and top with salad leaves. Below this, place a short slice of your orangey cheese, and finally, at the bottom of the crispbread, add a slice of salami or a layer of grated beetroot. These colours are stunning, and the wide variety of flavours (from beetroot to pesto) and textures (crunchy leaves to smooth cheese) make a magnificent eat.

The sweet traffic lights: This time the green light is a thin slice of honeydew melon, placed at the top of a crispbread. Underneath, add a couple of clementine segments, and lastly spread some raspberry jam at the bottom. This is a very different eating experience to the savoury traffic lights, but just as interesting and scrumptious! Everybody loves raspberry jam, and the simple honeydew melon flavour is perfect to calm down after the strong taste of the clementine.
